King cake season opens January 6 and peaks in the fifteen days before Mardi Gras. The decisions that make or break a bakery's year get made in November.
The King Cake Countdown: Nine Weeks Out and the Bakers Are Already Prepping
King cake season opens January 6, 2027. That is nine weeks from now, which means the flour order, the oven schedule and the seasonal hires are being decided this month.
Why bakers start in November
A king cake is not a hard pastry. It is a hard pastry to make by the thousand in seven weeks. The work is not the recipe, it is capacity: proofing space, oven time, and the little plastic babies that have to be ordered in a quantity nobody wants to guess wrong on.
Bakery owners here start planning in November because the ingredient commitments come before the season, and because the people who will work the line in January have to be hired and trained in December. That is the part customers never see. A shop that waits until the season opens is already behind on both counts.
The math of a short season
King cake season runs from Epiphany on January 6 to Mardi Gras on February 9, 2027, with the volume concentrated in the last three weeks. A bakery selling hundreds of cakes a day at peak is not selling hundreds in the first week of January. That ramp is the hard part: staff, refrigeration and delivery all have to be sized for a peak that lasts fifteen days.
The problem nobody solves
Freshness. A king cake is at its best the day it is made, and most of them are bought to be shared at an office or a table the next morning. Keeping one presentable for two or three days without it turning into a dried-out ring is a real problem, and it is the reason some bakeries now sell the box as carefully as the cake.
If you are ordering this year
Place the order in early January, not the week of Mardi Gras. Ask whether pickup is scheduled in a window or a free-for-all, and ask what day the cake is actually baked. A cake baked Monday and picked up Wednesday is a different product than one baked that morning.
For the bakeries
The three weeks that decide your year are November, December and the first week of January. Ingredient contracts, seasonal hires and oven scheduling all get locked before the first parade. Wait until the season starts and you are not running a bakery, you are surviving one.
